1 c flour
1/4 c powdered sugar
1/4 t salt
1 t vanilla
1/2 c butter (cold)
In a bowl combine flour, powdered sugar, salt, & vanilla. Cut in the cold butter & work with your fingers until the mixture resembles cornmeal. Press into greased 13×9 inch pan and bake at 350 degrees for 18-20 minutes, until golden.
Filling –
1 1/4 c sugar
1/4 c flour
4 eggs
2 t lime zest
2/3 c lime juice
1/8 t green food coloring paste
In a bowl whisk together sugar & flour. Add the eggs, one at a time, whisk after each addition. Add zest, lime juice & food coloring to produce desired color. Mix until smooth & combined.
Pour filling over hot crust and return to oven, bake another 18-20 minutes. When done, the filling will not jiggle. Cool, dust with powdered sugar. Store in the refrigerator, serve cold.
