Marshmallow Stuffed Chocolate Cookies
Ingredients:
- flour - 3 cups
- cocoa powder - 2/3 cup
- baking soda - 1/2 t
- sugar - 1 cup
- packed brown sugar - 1 cup
- butter, softened - 1 cup
- eggs - 2
- vanilla extract - 2 t
- mini chocolate chips - 1 cup
- miniature marshmallows, frozen - 8 ounces
Instructions:
In a bowl, combine flour, cocoa and baking soda; set aside. In a second bowl, mix together the sugars, butter, eggs and vanilla. Add flour mixture and blend together (batter will be stiff).
Take a heaping tablespoon of dough and wrap around 3 - 4 FROZEN marshmallows to form a ball. Place cookie dough balls onto a lightly greased cookie sheet. Gently press 7 - 8 mini chocolate chips onto the top of each cookie dough ball.
Bake in a preheated 400 degree oven for 8 - 10 minutes.
KEEP MARSHMALLOWS FROZEN UNTIL READY TO FORM COOKIES.
