1/2 c butter
1 c sugar
2 eggs
1 t vanilla extract
1/2 c flour
1/4 c cocoa
1/4 t salt
In a bowl, combine the flour, cocoa and salt. Set aside.
In a saucepan, melt butter over low heat. Remove from heat, add sugar, stirring well to combine. Whisk in the vanilla and eggs. Blend well.
Add dry ingredients to egg mixture and mix well.
Pour batter into a greased 13×9 inch pan.
Bake at 350 degrees for 32-35 minutes, until the brownies are set in the middle DO NOT OVERBAKE.
Cool completely
2 1/2 c powdered sugar
3 T butter, soft
3 T whipping cream
2 ounces cream cheese
1/8 -1/4 t mint extract (to desired taste)
2-4 drops green food coloring
Combine all ingredients and beat until well blended and fluffy. Spread on brownies, place in refrigerator for 1 hour or until set
1/3 c butter
1/3 c whipping cream
1 1/3 c semi sweet chocolate chips
In a saucepan combine ingredients over medium heat stirring constantly until chocolate is melted. Set aside to cool about 10 minutes. While still slightly warm, pour over mint filling spread evenly. Place in the refrigerator to set chocolate.
Remove from refrigerator 10-15 minutes before serving. Cut into bars
