Mint Chocolate Chip Cookies
Ingredients:
- flour - 2 1/4 cups
- baking soda - 1 t
- cornstarch - 1 1/2 t
- salt - 1/2 t
- unsalted butter, melted - 3/4 cup
- packed, light brown sugar - 3/4 cup
- sugar - 1/2 cup
- egg - 1
- egg yolk - 1
- vanilla extract - 2 t
- Mint chocolate chips - 1/2 cups
Instructions:
In a bowl, combine flour, baking soda, cornstarch and salt together; set aside. In a second bowl, whisk together butter, brown sugar, and sugar. Whisk in egg, then egg yolk. Whisk in vanilla. Pour wet ingredients into dry, mix together with a rubber spatula. The dough will be very soft, slightly crumbly. Fold in the mint chips. Cover dough tightly with foil, place in refrigerator for at least 1 hour. Remove dough from the refrigerator, let sit at room temperature for 10 minutes.
Roll dough into 16 balls. (Dough will be crumbly.) Place dough on 2 parchment paper lined cookie sheets. Bake in a preheated 325 degree oven for 11 - 12 minutes. Cookies will look soft and underbaked. Remove from oven, let cool on cookie sheets for 5 minutes, place on wire rack to cool completely. Yield 16 cookies. Store in a airtight container.
