Mounds Brownies
Ingredients:
- butter, melted - 1/2 cup
- sugar - 1 1/2 cups
- vanilla extract - 1 1/2 tsp
- eggs - 2
- flour - 3/4 cup
- salt - 1/4 tsp
- unsweetened cocoa powder - 1/2 cup
- chocolate chips - 1/2 cup
- Coconut layer --
- sweetened condensed milk - 1 1/3 cups
- coconut - 4 1/2 cups
- powdered sugar - 1 cup
- Topping --
- semi sweet chocolate chips - 1 cup
- heavy cream - 1/2 cup
- butter - 1 T
Instructions:
Prepare brownies -- in a large bowl, combine butter, sugar and vanilla. Beat in eggs. In a second bowl combine flour, cocoa powder and salt. Add dry ingredients a little at a time to egg mixture, mix just until combined. Fold in chocolate chips. Pour into a lightly greased 9 x 9 inch pan.
Bake in a preheated 350 degree oven for 22 - 26 minutes or just until done (DO NOT over bake). Remove and cool.
Prepare coconut layer -- in a bowl, mix together sweetened condensed milk, coconut and powdered sugar. Spread over cooled brownies.
Prepare topping -- place chocolate chips in a bowl; set aside. In a saucepan, bring heavy cream and butter just to a boil. Pour over chocolate chips and let sit 4 minutes WITHOUT STIRRING. Then stir until completely combined. Pour mixture over the coconut layer. Cool to room temperature for 30 minutes. Place in refrigerator to set.
A boxed brownie mix for a 9 x 9 inch pan will also work. (Prepare brownies per package directions.)
