Nanaimo Bars
Ingredients:
- butter - 1/2 cup
- sugar - 1/4 cup
- unsweetened cocoa powder - 5 T
- egg, beaten - 1
- graham cracker crumbs - 1 1/4 cups
- 1/2 c butter 1/4 c sugar 5 T unsweetened cocoa 1 egg, beaten 1 1/4 c graham cracker crumbs 1/2 c toasted macadamia nuts, chopped 1 c coconut - 1/2 cup
- coconut - 1 cup
- butter - 1/2 cup
- heavy cream - 2 T plus 2 tsp
- vnailla pudding mix - 2 T
- powdered sugar - 2 cups
- juice and zest - from 1 lime
- green food coloring - to desired color
- white chocolate - 4 ounces
- heavy cream - 2 T
Instructions:
In the top of a double boiler melt 1/2 cup butter and sugar. Add egg and stir till thicken. Remove from heat. Stir in crumbs, nuts and coconut. Press firmly into an ungreased 8 x 8 inch pan.
In a bowl, cream together 1/2 cup butter, cream, pudding mix, powdered sugar and lime juice. Beat until light in color. Stir in lime zest and food coloring. Spread over graham cracker layer.
Over low heat, melt together chocolate and cream; stir until smooth. Cool, pour over top and chill.
