Nutter Butter Cheesecake Bars
Ingredients:
- nutter butter cookies - 16
- butter, melted - 1/4 cup
- cream cheese, softened - 8 ounces
- sugar - 1/3 cup
- vanilla extract - 1 t
- egg - 1
- flour - 1/2 T
- Butterfinger candy bars, finely chopped - 6 fun size
- semi sweet chocolate chips - 3/4 cup
- butter - 3 T
Instructions:
Prepare crust -- in a food processor grind cookies until the consistency of graham cracker crumbs. Pour in butter and pulse a few times to mix. Press mixture into a 9 x 9 inch baking pan lined with lightly greased parchment paper. (Have paper hang over the edge of the pan for easy removal.)
Prepare filling -- whip together cream cheese and sugar until smooth, stir in egg, vanilla and flour. Fold in butterfingers. Pour filling over crust and bake in a preheated 325 degree oven for 18 - 22 minutes or until cheesecake has set. Cool to room temperature, then place in refrigerator until completely chilled.
Prepare topping -- melt together chocolate chips and 3 T butter, evenly spread chocolate over filling, place in the refrigerator for 5 - 6 minutes for chocolate to harden. Remove from refrigerator, lift bars out of the pan, cut into bars.
