Oatmeal Chocolate Chip Cookies
Ingredients:
- egg - 1
- butter - 1/2 cup
- packed light brown sugar - 1/2 cup
- sugar - 1/4 cup
- vanilla extract - 1 T
- old fashioned rolled oats - 1 1/2 cups
- flour - 3/4 cup
- cinnamon - 1/2 - 1 t - to desired taste
- baking soda - 1/2 t
- salt - pinch
- semi sweet chocolate chips - 1 1/4 cups
- raisins OR nuts - 1/2 cup - to desired taste
Instructions:
In a bowl, combine egg, butter, sugar, brown sugar, vanilla, beat on medium high speed until well combined. With mixer on low speed, add oats, flour, cinnamon, baking soda, salt; beat until just combined, about 1 minute. Scrape the sides of the bowl, stir in chocolate chips and raisins or nuts. With your hands roll about 1/4 cup dough in a ball, flatten slightly. Place on a plate, cover, place in refrigerator for at least 2 hours, (dough needs to be cold before baking).
Place cookies 2 inches apart on a greased baking sheet. Bake in a preheated 350 degree oven for 11 minutes (for super soft cookies, longer for more well done cookies), or until edges have set and tops are just set. Cookies firm up as they cool. Cool cookies on baking sheet for 10 minutes, remove, place on cooling rack.
Store cookies in a airtight container, at room temperature for up to 1 week. Yields 12 cookies.
