Peanut Chews
Ingredients:
- flour - 1 1/2 cups
- packed brown sugar - 2/3 cup
- baking powder - 1/2 t
- salt - 1/2 t
- baking soda - /4 t
- margarine, softened - 1/2 cup
- vanilla - 1 t
- egg yolks - 2
- miniature marshmallows - 3 cups
- light Karo syup - 2/3 cup
- margarine - 1/4 cup
- vanilla - 2 t
- peanut butter chips - 10 ounce package
- Rice Krispie cereal - 2 cups
- salted peanuts - 2 cups
Instructions:
Prepare crust -- in a bowl, combine flour, brown sugar, baking powder, salt, baking soda, margarine, vanilla and egg yolks with mixer on low speed until crumbly. Press mixture firmly in a ungreased 13 x 9 inch baking pan. Bake in a preheated 350 degree oven for 12 - 15 minutes, until light golden brown. Remove from oven, immediately sprinkle marshmallows over bottom. Return to oven, bake for 1 - 2 minutes until marshmallows puff. Set aside; cool.
Prepare topping -- in a saucepan, combine Karo syrup, margarine, vanilla and peanut butter chips; stir constantly until chips are melted and mixture is smooth. Stir in cereal and peanuts. Carefully spoon mixture evenly over marshmallows.
Place in refrigerator for 45 minutes until firm. Cut into bars.
