Pecan Bars
Ingredients:
- pecans - 3 1/2 c chopped pecans coarsely
- flour - 2 c
- butter, cubed - 3/4 c
- powdered sugar - 2/3 c
- brown sugar - 1/2 c firmly packed
- honey - 1/2 c
- butter - 2/3 c
- whipping cream - 3 T
Instructions:
Line the bottom and sides of a 13 x 9 inch pan with foil, lightly grease. Place pecans in a single layer in a shallow pan, in a preheated 350 degree oven for 8 - 10 minutes, until lightly toasted, stir halfway through. In a bowl combine flour, powdered sugar and 3/4 c butter with a pastry cutter until mixture resembles coarse meal. Press mixture in the bottom and 3/4 inch up the sides of the pan. Bake crust for 20 minutes, until edges are lightly brown, Cool completely. In a saucepan over medium high heat, combine brown sugar, honey, 2/3 c butter and bring to a boil; stir in pecans, spoon filling over crust. Bake for 25 -30 minutes until golden. Cool completely on a wire rack. Using foil sides, lift bars from pan. Cut into bars.
