Pecan Pie Squares
Ingredients:
- flour - 3 cups
- sugar - 1/4 cup plus 2 T
- salt - 3/4 t
- margarine, softened - 3/4 cup
- eggs - 4
- sugar - 1 1/2 cups
- light Karo corn syrup - 1 1/2 cups
- margarine, melted - 3 T
- vanilla - 1 1/2 t
- chopped pecans - 2 1/2 cups
Instructions:
Prepare crust -- in a bowl, beat together flour, 1/4 cup plus 2 T sugar, salt and 3/4 cup margarine, until crumbly, mixture will be dry. Press mixture firmly into a greased 15 x 10 inch pan.
Bake in a preheated 350 degree oven for 20 minutes.
Prepare filling -- in a second bowl, mix together eggs, 1 1/2 cups sugar, corn syrup, 3 T margarine and vanilla. Stir in pecans.
Pour filling evenly over baked crust, return to oven and bake for 25 minutes or until filling is set.
