Peppermint Cookies
Ingredients:
- powdered sugar - 1 1/2 cups
- butter, softened - 1 cup
- peppermint extract - 1 t
- vanilla extract - 1 t
- egg - 1
- flour - 3 cups
- candy canes, crushed - 3
- baking powder - 1 t
- salt - 1/2 t
- chopped Candy Cane Hershey Kisses - 1/2 cup
- sugar - to roll cookies in
- Candy Cane Hershey Kisses - 36
Instructions:
In a bowl, combine powdered sugar, butter, extracts and egg; beat on medium speed until fluffy. In a second bowl, combine flour, crushed candy canes, baking powder and salt. Add flour mixture to wet mixture, beat until well blended (mixture will be kind of dry); stir in chopped kisses. Shape dough into 1 inch balls; roll in sugar. Place 1 inch apart on greased cookie sheet.
Bake in a preheated 350 degree oven for 10 - 12 minutes, until firm and set. Remove from oven; immediately press a Candy Cane Kiss in the center of each cookie. Very quickly place cookie sheet in refrigerator to prevent the kisses from melting.
