Pineapple Bars
Ingredients:
- flour - 1 1/2 cup
- sugar - 1/2 cup
- salt - pinch
- cold butter, cubed - 3/4 cup
- Filling --
- eggs - 2
- sugar - 1 cup
- flour - 1/3 cup
- sour cream - 1/2 cup
- salt - pinch
- crushed pineapple, draned - 16 ounce can
- Glaze --
- powdered sugar - 1 cup
- half & half - 2 T
- coconut extract - 1 tsp
Instructions:
Prepare crust --in a bowl, combine until crumbly, flour, sugar, salt and butter. Set aside 1 cup of crumb mixture. Press remaining in a greased 13 x 9 inch glass baking dish. Bake in a preheated 350 degree oven for 15 minutes.
Prepare filling while crust is baking -- in a bowl, whisk eggs, add sugar, sour cream, flour and salt, mix. Gently fold in pineapple.
Remove crust from oven, gently spoon filling over the crust. Sprinkle 1 cup crumb mixture over top.
Return to oven, bake 45 minutes - 1 hour or until top is lightly browned. Cool for 15 minutes.
Prepare glaze -- in a bowl, mix together until smooth, powdered sugar, half & half and coconut extract. Drizzle glaze over bars.
