Pineapple Coconut Bars
Ingredients:
- butter, room temperature - 1/2 cup
- flour - 1 cup
- sugar - 1/2 cup
- Filling --
- sugar - 1 cup
- flour - 2 T
- baking powder - 1/4 tsp
- salt - 1/4 tsp
- eggs - 2
- vanilla extract - 1 1/2 tsp
- chopped walnuts - 1/2 - 1 cup
- flaked coconut - 1 1/2 cups
- crushed pineapple, drained - 20 ounce can
Instructions:
Line the bottom of 9 x 9 inch baking pan with parchment paper, allow paper to stick above the edges on two sides. Grease the other 2 sides; set aside.
Prepare crust -- in a bowl, mix together butter, flour and sugar, form into a ball. Evenly press dough into the bottom of prepared pan.
Bake in a preheated 350 degree oven 350 for 10 - 15 minutes.
Prepare filling -- in a bowl, whisk together sugar, flour, baking powder and salt. Add eggs and vanilla, mix well. Stir in walnuts, coconut and pineapple. Spread mixture evenly over crust.
Bake for 20-25 minutes, until edges are golden. Cool completely, before cutting.
If desired cut into squares, top with a small dollop of whipped cream, garnish with a maraschino cherry.
