2 1/2 c flour
1 (3.4 ounce) box pistachio instant pudding mix
1 t baking powder
1/2 t salt
1 c butter, soft
1 c sugar
2 large eggs
1 t vanilla extract
In a bowl mix flour, pudding mix, baking powder and salt and set aside.
In a bowl cream butter and sugar, add in eggs and vanilla. Gradually add flour mixture until combined.
Spread into greased baking dish.
Bake in preheated 375 degree oven for 11-14 minutes just until bottom begins to lightly brown. DO NOT over bake. Top will not be firm, but will firm up upon sitting.
Place on wire rack to cool completely. Prepare buttercream frosting —
1/2 c butter
3 c powdered sugar
1/2 t vanilla extract
2-3 T milk
In a bowl cream butter, gradually add powdered sugar beat until combined.
Stir in vanilla extract, slowly add milk, 1 tablespoon at a time until desired consistency.
Spread over bars and let set. Cut into bars.
Store in an airtight container.
If desired chopped pistachio’s may be added to bars or frosting.
