Raspberry Bars with Streusel Topping
Ingredients:
- flour - 3/4 c
- powdered sugar - 1/4 c
- salt - dash
- butter, cold and cut into pieces - 6 T
- raspberry jam - 1/4 c
- fresh or frozen raspberries - 2 c
- flour - 1 - 2 T
- butter, cold and cut into pieces - 4 T
- flour - 1/2 c
- packed brown sugar - 1/2 c
Instructions:
Prepare crust combine 3/4 c flour, powdered sugar and salt. Cut 6 T butter into dry ingredients until butter is the size of small peas. Press mixture into the bottom of an 8 x 8 inch pan. Bake in a preheated 375 degree oven for 10 - 12 minutes or till just starting to brown.
Prepare filling -- In a small pan melt the jam. Gently mix raspberries with 1 - 2 T flour frozen berries (1 T flour fresh berries); set aside.
Prepare streusel topping -- mix 4 T butter, flour and brown sugar together just till combined and crumbly.
When crust is done, evenly spread jam over crust, top with berries, sprinkle streusel topping over berries.
Return to oven for 25 - 30 minutes or until berries are bubbling and topping is brown. Cool completely before cutting.
