Raspberry Rhubarb Bars
Ingredients:
- flour - 1 3/4 cups
- light brown sugar - 3/4 cup
- baking soda - 1 tsp
- salt - 1/2 tsp
- butter, cold - 3/4 cup
- sliced almonds - 1/2 cup
- sliced rhubarb, cut 1/2 inch thick - 2 cups
- raspberries - 2 cups
- sugar - 3/4 cup
- cornstarch - 2 T
- fresh orange juice - 2 T
- vanilla extract - 2 tsp
Instructions:
Line 8 x 8 inch baking pan with parchment paper, leaving 2-inch overhang; set aside.
In processor, pulse together flour, brown sugar, baking soda and salt. Add butter; pulse into coarse crumbs. Press 2/3's of mixture into bottom of pan. Bake in a preheated 350 degree oven for 15 minutes, or until pale golden; cool slightly.
Mix together remaining 1/3 crumb mixture and almonds; press into large crumbs; set aside.
In bowl, combine rhubarb, raspberries, sugar, cornstarch, juice and vanilla; spread over crust. Sprinkle with crumb topping. Bake in a 350 degree oven for 40 - 45 minutes, or until bubbling. Place pan on wire rack to cool. Lift out bars; cut into 16 pieces
