Rhubarb Crumble Bars
Ingredients:
- rhubarb - 1 1/2 c, chopped
- brown sugar - 1 c packed, divided
- water - 4 T, divided
- lime juice - 1 t
- cornstarch - 4 t
- old-fashioned oats - 1 c
- flour - 3/4 c
- coconut - 1/2 c
- salt - 1/2 t
- butter - 1/3 c, melted
Instructions:
In a saucepan, combine rhubarb, 1/2 c brown sugar, 3 T water and lime juice. Bring to a boil, reduce heat and simmer for 5 minutes or until rhubarb is tender. Combine cornstarch and 1 T water, stir until smooth. Gradually stir cornstarch mixture into the rhubarb and bring back to a boil for about 2 minutes or until thickened. Remove from heat; set aside.
In a bowl, combine oats, flour, coconut, salt and 1/2 c brown sugar. Pour in the melted butter, stir until mixture is crumbly. Lightly press half of the oat mixture into a greased 8 x 8 inch pan. Top with the rhubarb mixture and then spread the remaining oat mixture on top.
Bake in a preheated 350 degree oven for 25-30 minutes or until golden brown.
