Rhubarb Custard Bars
Ingredients:
- flour - 2 cups
- sugar - 1/4 cup
- cold margarine - 1 cup
- sugar - 2 cups
- flour - 7 T
- half & half - 1 cup
- eggs, beaten - 3
- diced rhubarb - 5 cups
- cream cheese, softened - 6 ounces
- sugar - 1/2 cup
- vanilla - 1 t
- half & half - 1 cup
Instructions:
Prepare crust -- combine 2 cups flour, 1/4 cup sugar and margarine, with a pastry blender, cut into coarse crumbs. Press into a greased 13 x 9 inch baking pan. Bake in preheated 350 degree oven for 10 minutes.
Prepare custard -- in a bowl, combine 2 cups sugar, 7 T flour, stir in 1 cup half & half and eggs. Fold in rhubarb, spread evenly over baked crust. Return to oven, bake for 40 - 50 minutes or until custard is set.
Prepare topping -- in a bowl, beat together cream cheese, 1/2 cup sugar and vanilla until smooth. Blend in 1 cup half & half. Spread topping over hot bars.
NOTE -- if using frozen rhubarb, thaw and drain.
