Rice Krispie Roll
Ingredients:
- mini marshmallows - 10 ounces
- butter OR margarine - 1/4 cup
- peanut butter, divided - 3/4 cup
- Rice Krispies - 6 cups
- semi sweet chocolate chips - 1 1/2 cups
Instructions:
Line a small jelly roll pan with waxed paper, coat the paper with butter.
Melt marshmallows, butter and 1/4 cup peanut butter together; stir until smooth. Add Rice Krispies, stir until coated. Press mixture onto the greased wax paper.
Melt together chocolate chips and 1/2 cup peanut butter, stir until smooth. Spread chocolate mixture evenly over Rice Krispies. Starting with one of the long edges, tightly roll mixture into a log.
Place log in refrigerator for 30 minutes, remove and slice into 1/2 inch thick pieces. Store covered at room temperature.
