1/2 c butter, room temperature
1 c light brown sugar, packed
1 1/4 c flour
1 1/2 c finely crushed graham crackers
1 1/2 t baking powder
2 eggs
1/2 c plus 2 T milk
1 t baking soda
1 t vinegar
2 t vanilla
6 (1.55 oz) Hershey Bars
In a bowl combine graham cracker crumbs, flour, and baking powder, set aside.
In a bowl stir milk, vanilla, baking soda and vinegar together, set aside.
In a bowl beat together butter and brown sugar for 2 minutes at medium speed.
Add eggs and continue to beat.
Alternating slowly add dry ingredients and milk mixture and beat for an additional 1 minute.
Drop by heaping tablespoon sized portions onto parchment paper lined baking sheet. Place dough at least 2 inches apart, the cookies spread during baking.
Bake at 375 degrees for 8-10 minutes until cookies are set.
Cool on baking sheet for 3 minutes and then transfer to wire rack.
Melt Hershey Bars.
Spread a tablespoon of chocolate on the bottom of half the cookies.
Filling –
1/2 c butter room temp
1 c Marshmallow Cream
2 c powdered sugar
2 T milk
Mix butter and Marshmallow Cream together until smooth.
Slowly add powdered sugar. Add milk and mix until combined and smooth
Spread filling on the bottom on the remaining cookies. Leave room at the edge for the frosting to spread when cookies are put together.
Place the frosting side on top of the chocolate side.
Store in an airtight container. Makes approx. 20 sandwiched cookies.
