Snickerdoodle Chex Mix Bars
Ingredients:
- Corn Chex - 2 cups
- Rice Chex - 1 cup
- Whole Wheat Chex - 1 cup
- bite size pretzels - 1 1/2 cups
- M & M 's - 1 cup
- mixed nuts - 1 cup
- butter, melted - 1/4 cup
- cinnamon - 1 t
- vanilla extract - 1 t
- creamy peanut butter - 1 cup
- Karo syrup - 1 cup
- brown sugar - 1 cup
- semi sweet chocolate chips - 2 - 3 cups
Instructions:
In a bowl combine all Chex cereal, pretzels, M & M's and nuts; toss well.
In a bowl whisk together butter, cinnamon and vanilla. Pour butter mixture over the Chex mix; toss until the butter and cinnamon has coated all the Chex mix.
In a saucepan heat Karo syrup, peanut butter and brown sugar almost to a boil. Stir to combine the ingredients. Once the mixture begins to bubble around the edges, stir for 1 minute; remove pan from heat. Pour peanut butter mixture over chex mix; toss well.
Spoon mixture into throughly greased 24 cupcake wells or 9 x 13 inch pan lined with wax paper; lightly press the mixture together. Melt chocolate chips and spread over bars. Place in the refrigerator for 45 minutes.
