Sour Cream Crumb Bars
Ingredients:
- butter, melted, cooled to room temperature - 1/2 cup
- light brown sugar - 1/2 cup
- flour - 1 1/2 cups
- baking soda - 1/2 t
- baking powder - 1/2 t
- salt - 1/4 t
- pie filling of choice cherry, raisin, blueberry, etc - 1 cup
- sour cream - 1/2 cup
- sugar - 1/4 cup
- flour - 1 T
- egg - 1
- vanilla - 1/2 t
Instructions:
In a bowl whisk together crust ingredients flour, brown sugar baking soda, baking powder and salt, add butter. (Mixture will be crumbly) Set aside 3/4 c of crust mixture and press the remaining mixture into 8 inch square pan lined with parchment paper coated with cooking spray.
Prepare filling -- In a bowl mix together sour cream, sugar, flour, egg and vanilla, pour over crust. Spoon pie filling over crust and swirl with cream cheese mixture. Sprinkle reserved crust over top. Bake in preheated 375 degree for 25 - 28 minutes, until golden brown.
Store in the refrigerator up to 3 days.
