Sour Cream Raisin Bar
Ingredients:
- raisins - 2 cups
- quick oats - 1 3/4 cup
- flour - 1 3/4 cup
- baking soda - 1 t
- brown sugar - 1 cup
- cinnamon - 1 t
- butter, soft - 1 cup
- egg yolks - 3
- sour cream - 1 1/2 cups
- sugar - 1 cup
- cornstarch - 2 1/2 T
- vanilla - 1 t
Instructions:
Cover raisins with hot water and let soak until plump, 5 - 10 minutes, drain; set aside. Crumble together oats, flour, baking soda, brown sugar, cinnamon, and butter in a large bowl. Press half of the crumb mixture into 9 x 13 inch pan, lined with parchment paper and lightly sprayed with cooking spray. Bake in a preheated 350 degree oven for 5 minutes. Remove from oven; set aside.
In medium saucepan, over medium heat, whisk together egg yolks, sour cream, sugar and cornstarch, stir constantly until mixture thickens, about 10 minutes. Remove from heat and stir in vanilla and raisins. Pour the filling over the partially baked crust. Sprinkle remaining oat mixture over the filling and lightly press down. Bake at 350 for 30 minutes, until top is browned. Store covered in the refrigerator.
