Sour Cream Raisin Bars
Ingredients:
- raisins - 2 cups
- sugar - 1 cup
- salt - 1/4 tsp
- cornstarch - 3 T
- half & half - 1 pint
- Crust
- margarine - 1 cup
- brown sugar - 1 cup
- flour - 1 3/4 cups
- baking soda - 1 tsp
- rolled oats - 1 3/4 cups
Instructions:
Cover raisins with water and boil for 5 minutes; drain.
In saucepan, blend together sugar, salt, cornstarch, eggs and half & half, cook over low heat, stirring constantly until thick. Stir in drained raisins.
Prepare crust -- cream together margarine and brown sugar, add flour, oatmeal and baking soda; mix.
Grease a 13 x 9 inch baking pan and pat 2/3 of the rolled oats mixture into pan. Set aside remaining crumbs for top.
Bake in a preheated 350 degree oven for 10 minutes.
Pour pudding/raisin mixture over baked crust and sprinkle remaining crumbs over top.
Return to oven, bake for 15 - 20 minutes.
