Texas Cowboy Bars
Ingredients:
- dates, cut into fourths - 8 ounces
- sugar - 1 cup
- water - 1 cup
- lemon zest - 1 1/2 t
- flour - 1 1/2 cups
- brown sugar - 1 cup
- rolled oats - 1 1/2 cups
- chopped walnuts - 1/2 cup
- salt - 1/2 t
- butter, melted - 1 cup
Instructions:
Prepare filling -- in a saucepan, bring to a boil dates, sugar and water, boil for 12 - 15 minutes, stir occasionally. Stir in zest. Cool to lukewarm.
Prepare crust -- in a bowl mix together flour, brown sugar, oats, walnuts and salt; set aside 1 cup. Press remaining mixture into a foil (grease foil) line 9 x 9 inch baking pan. Spread filling over crust, sprinkle reserved crust over top. Gently press topping into filling.
Bake in a preheated 350 degree oven for 45 minutes until bubbles form around the edge. Cool for 45 minutes, cover, place in refrigerator for 4 hours until firm.
