Toffee Cookies
Ingredients:
- flour - 1 1/2 cup
- old fashioned rolled oats - 2 cups
- baking soda - 1 t
- salt - 1/2 t
- packed brown sugar - 1 1/2 cup
- butter, softened - 1/2 cup
- maple extract OR vanilla extract - 2 t
- eggs - 2
- toffee bits - 2/3 cups
Instructions:
In a bowl whisk together flour, oats, baking soda and salt. Beat together sugar and butter until well blended, add vanilla and eggs; beat well. Add flour mixture; beat just until combined, stir in toffee bits. Using a cookie scoo, place mounds of dough 2 inches apart on greased baking sheets. Bake in a preheated 350 degree oven for 9 - 11 minutes. DO NOT OVERBAKE!!!! Cool on pans for 1 minute. Remove cookies from pans; cool completely on cooling racks.
