Truffle Fudge Bars
Ingredients:
- brownie mix for 8 x 8 inch pan - 1 box
- unsweetened chocolate - 8 ounces
- butter, room temperature - 1 cup
- vanilla extract - 2 tsp
- powdered sugar - 6 cups
- heavy cream - 4 - 5 T
- strong coffee, cooled - 2 T
- salt - 1/4 tsp
- semisweet chocolate chips - 2 cups
- heavy cream - 1/2 cup
- butter - 1/2 cup
Instructions:
Bake brownies as per package directions, bake in a 13 x 9 inch baking pan. (If a thicker brownie base is desired use a brownie mix for a 13 x 9 inch pan. Bake per package directions.)
Prepare chocolate buttercream truffle layer -- melt 8 ounces unsweetened chocolate per package directions, cool to room temperature. In a bowl, beat butter and vanilla until light and fluffly. Slowly add powdered sugar, 1 cup at a time, beating between each cup. Turn mixer on high and beat, scrape down the sides of the bowl and beat for 1 minute. Beat in salt, coffee and 4 - 5 T heavy cream for 1 minute. With mixer on the lowest speed, slowly add unsweetened chocolate. Beat for 1 minute on high. If needed add more heavy cream, 1 T at a time. Carefully spread over brownies.
Prepare chocolate frosting -- in a saucepan bring 1/2 cup heavy cream and 1/2 cup butter to a boil. Pour over the chocolate chips. Let it sit for a couple of minutes for the chocolate chips to melt. Stir gently until smooth. Spread evenly over the truffle layer. Let bars completely cool and set before cutting.
