Zucchini Sandwich Cookies
Ingredients:
- flour - 1 cup
- cinnamon - 1 1/4 tsp
- baking soda - 1/2 tsp
- baking powder - 1/2 tsp
- sugar - 1/2 cup
- packed light brown sugar - 1/2 cup
- vanilla extract - 1/2 tsp
- grated zucchini - 1 cup
- old fashioned oats - 1 cup
- walnuts, chopped - 1/2 cup
- cream cheese - 8 ounces
- powdered sugar - 1 cup
- coarse salt - 1/4 tsp
- butter - 3/4 cup
- egg - 1
Instructions:
Sift together flour, cinnamon, baking soda, baking powder and 1/4 tsp salt into a bowl. Beat 1/2 cup butter, sugar and brown sugar until pale and fluffy. Beat in egg and vanilla.
Beat flour mixture into butter mixture. Mix in zucchini, oats and walnuts. Cover. place in the refrigerator until firm, about 1 hour. Using a 1 1/2 inch scoop (2 T), drop dough onto parchment lined baking sheets, space 2 inches apart.
Bake in a preheated 350 degree oven for 17 minutes, until edges are golden. Cool completely on a wire rack.
Filling -- in a bowl, beat together 1/4 cup butter, cream cheese and powdered sugar until smooth. Spread 1 heaping tablespoon filling onto the flat side of 1 cookie, place another cookie on filling, flat side down. Repeat with remaining filling and cookies. Yield 14 sandwiched cookies.
