Almond Joy French Toast
Ingredients:
- Italian bread, cut into 1/2 inch thick slices - 1 loaf
- coconut - 2 cups
- sliced almonds - 1 1/2 cups
- eggs - 8
- Silk Almond milk - 2 1/2 cups
- sugar - 1/4 cup
- salt - 1/4 t
- vanilla extract - 2 t
- coconut - 1/2 cup
- sliced almonds - 1/4 cup
- chocolate syrup or fudge topping - garnish
Instructions:
In a bowl, combine milk, vanilla and 1 cup coconut, let soak for 15 minutes.
Remove coconut from bowl, evenly spread coconut in a greased 13 x 9 inch baking dish. Spinkle half of the almonds over coconut. Place half of the bread over the almonds in a single layer. Spinkle 1 cup coconut and 3/4 cup almonds over bread slices. Top with a even layer of bread.
In the Almond milk bowl, add the eggs, sugar and salt whisk until smooth. Slowly pour egg mixture over bread. Sprinkle a little more coconut and almonds over top, with the back of a spoon press bread down. Cover, place in refrigerator overnight.
Bake in a preheated 350 degree oven for 45 - 50 minutes. Serve with warm chocolate gravy, warm chocolate syrup or warm fudge topping.
