Apple Bread Pudding
Ingredients:
- unsweetened applesauce - 1 cup
- milk - 1 cup
- packed brown sugar - 1/2 cup
- eggs - 2
- vanilla extract - 1 tsp
- cinnamon - 1/2 tsp
- day old bread, cubed - 5 cups
- peeled, chopped apple - 1/2 cup
- whipped topping - garnish
- caramel topping - garnish
Instructions:
In a bowl, combine applesauce, milk, brown sugar, eggs, vanilla and cinnamon. Fold in bread cubes and apple; let stand for 15 minutes or until the bread is softened.
Pour into a greased 8 x 8 inch square baking dish. Bake uncovered in a preheated 325 degree oven for 35 - 40 minutes or until a knife inserted near the center comes out clean.
Serve warm with whipped topping and caramel topping. Store leftovers covered in the refrigerator.
