Apple Pecan Squares
Ingredients:
- flour - 2 cups
- packed brown sugar - 3/4 cup
- ground cinnamon - 1 t
- baking soda - 1/2 t
- butter or margarine - 3/4 cup
- chopped peeled tart apples - 2 cups
- egg, slightly beaten - 1
- packed brown sugar - 3/4 cup
- chopped pecans - 1/2 cup
- butter - 2 T
- honey - 2 T
- milk - 2 T
Instructions:
In a bowl mix together flour, 3/4 cup brown sugar, cinnamon and baking soda. With a pastry blender cut in 3/4 cup butter until mixture is coarse. Stir in apples and egg. Firmly press mixture into a greased 9 x 9 inch pan. Bake in a preheated 350 degree oven for 25 - 30 minutes, until center is puffed.
Prepare topping -- in a saucepan, combine 3/4 cup brown sugar, 1/2 cup pecans, 2 t butter, honey and milk. Cook over medium heat, stir frequently, until mixture comes to a boil; boil 1 minute, stir constantly. Remove from heat. Evenly spread hot topping over warm apple layer. Return to oven; bake for another 4 - 6 minutes or until topping is bubbly. Cool completely before cutting into squares. Serve with cool whip or ice cream.
