Apple Pie Bread Pudding
Ingredients:
- challah OR French bread, cut into 1 inch cubes - 1 pound loaf
- heavy cream - 2 cups
- milk - 1 cup
- sugar - 1/2 cup
- cinnamon, divided - 2 tsp
- eggs - 5
- vanilla extract, divided - 2tsp
- apple pie filling - 20 ounce can
- chopped walnuts - 1/2 cup
- Icing --
- powdered sugar - 1 1/2 cups
- milk - 1 T
Instructions:
Spread bread cubes evenly in a greased and floured 13 x 9 inch baking dish.
In a bowl, whisk together cream, milk, sugar, eggs, 1 tsp cinnamon and 1 tsp vanilla. Pour mixture over bread, let sit for 5 minutes. Spread pie filling over the top of the bread. Sprinkle walnuts evenly over the top.
Bake uncovered in a preheated 350 degree oven for 50 - 55 minutes or until puffed and browned on top. Remove from oven and cool for 10 minutes.
Prepare icing -- in a bowl, mix together powdered sugar and milk. Stir in 1 tsp cinnamon and 1 tsp vanilla. Drizzle icing over bread pudding, serve.
