Apple Pie Cake
Ingredients:
- granny smith apples, peeled, sliced - 6
- cinnamon sugar - 2 T plus 1/4 cup
- eggs - 3
- superfine white sugar (spin a few times in blender) - 1 1/2 cups
- vegetable oil - 1 1/2 cups
- vanilla extract - 3 t
- flour - 1 1/2 cups
Instructions:
Grease a 10 inch spring form pan; set aside.
Layer apple slices to fill the pan 2/3 full, sprinkle 2 T cinnamon sugar over apples.
In a bowl, beat eggs and sugar together until light and fluffy. Add oil and vanilla and beat; fold in flour. Pour batter over apples, tapping the sides of the pan. Let pan set for 10 minutes for the batter seep between the apples.
Sprinkle 1/4 c cinnamon sugar over top. Bake in a preheated 350 degree oven for 1 hour and 20 minutes. Cool completely before cutting.
