Bailey’s Chocolate Cheesecake
Ingredients:
- cream cheese, room temperature - 16 ounces
- sugar - 1/4 cup
- special dark chocolate powder - 1/4 cup
- Bailey's - 4 T
- Whipped cream and cookies
- heavy whipping cream - 1 cup
- Bailey's - 2 T
- cocoa powder - 1 1/2 T
- powdered sugar - 3 T
- Oreo cookies, crushed - 15 plus 1 - 2, crushed for garnish
Instructions:
In a bowl, beat together cream cheese, sugar and cocoa until smooth. Add Baileys, mix well; set aside. In a second bowl, whip cream until it starts to thicken. Add Baileys, cocoa and powdered sugar, continue to whip until stiff peaks form.
To make trifles, divide half of the cookie crumbs evenly between four glasses, spread in an even layer in the bottom of the glasses. Using half of the filling, spoon an even layer of cheesecake filling on top of the cookie crumbs in each glass, then an even layer of whipped cream. Divide remaining cookie crumbs between glasses, evenly distribute a second layer of crumbs on top of the whipped cream.
Evenly divide remaining cheesecake filling between the glasses. Top each trifle with a dollop of whipped cream and cookie crumbs.
Place in refrigerator until ready to serve. Remove from refrigerator 15 minutes prior to serving.
