Berried Treasure
Ingredients:
- graham cracker crumbs - 1 1/2 cups
- sugar - 1/2 cup
- butter, melted - 1/3 cup
- cream cheese, softened - 8 ounces
- sugar - 1/4 cup
- cold milk - 2 1/2 cups plus 2 T
- Cool Whip, thawed - 16 ounces
- fresh blue berries OR fresh raspberries - 1 pint
- fresh strawberries, cut in half - i pint
- vanilla INSTANT pudding - 2 - 3.4 ounce boxes
Instructions:
Prepare crust -- in a bowl, mix together cracker crumbs, sugar and butter. Press crumb mixture into a 13 x 9 inch baking pan. Bake in a preheated 350 degree oven for 8 minutes. Set aside to cool.
Prepare filling -- in a bowl, beat together cream cheese 1/4 cup sugar and 2 T milk until smooth; fold in 1/2 of the Cool Whip. Spread mixture over cooled crust. Place berries over cream cheese mixture. Beat together the dry pudding mix and 2 1/2 cups milk until a thick consistency is reached; spread evenly over the berries. Cover and place in the refrigerator several hours or overnight. Before serving spread remaining Cool Whip over top. If desired, garnish with additional berries and mint leaves.
