Blueberry Puff
Ingredients:
- croissants, cut up - 3 large (5 - 5 1/2 cups)
- blueberries, fresh or frozen - 1 cup
- cream cheese, softened - 8 ounces
- sugar - 2/3 cup
- eggs - 2
- vanilla extract - 1 tsp
- milk - 1 cup
Instructions:
Place croissant pieces in a 9 x 9 inch baking pan. Sprinkle blueberries over top.
In a bowl, beat cream cheese, sugar, eggs and vanilla until well blended. Gradually beat in milk. Pour evenly over croissant pieces; set aside for 20 minutes.
Bake in a preheated 350 degree oven for 35 - 40 minutes or until set in center and golden brown. If top browns to fast, cover with foil for the last 10 minutes. Sprinkle powdered sugar over top. Serve warm.
Optional -- instead of baking in a 9 inch pan, place croissant pieces evenly in 10 (1/2 cup) ramekins; sprinkle on blueberries. Pour cream cheese mixture over croissant pieces; set aside for 20 minutes. Bake in a preheated 350 degree oven for 20 - 25 minutes or until set in the center and golden brown. Sprinkle powdered sugar over top.
