Bread Pudding
Ingredients:
- sugar - 1 1/2 cups
- eggs - 5 large
- milk - 2 cups
- vanilla extract - 2 t
- Challah, French OR Italian Bread - 6 - 8 cups
- packed brown sugar - 1 cup
- butter, soft - 1/4 cup
- chopped pecans - 1 cup
- sugar - 1 cup
- butter, melted - 1/2 cup
- egg, beaten - 1
- vanilla extract - 2 t
Instructions:
In a bowl, combine 1 1/2 cups sugar, 5 eggs, milk and 2 t vanilla, mix. Gently stir in bread crumbs to evenly coat. Let sit for 10 minutes.
Prepare topping -- in a bowl, crumble brown sugar, 1/4 cup butter and pecans together. Pour bread cube mixture in a greased 13 x 9 inch pan. Sprinkle crumble topping over bread cubes.
Bake in preheated 350 degree oven for 40 minutes or until set.
Prepare sauce -- in a saucepan, combine 1 cup sugar, 1/2 cup butter, 1 egg and 2 t vanilla, cook over medium heat until sugar melts. Pour over bread pudding. If desired return bread pudding to oven for an additional 4 - 5 minutes until top turns golden. Serve warm.
