Butterfinger Cheesecake
Ingredients:
- finely crushed Vanilla Wafers - 1 cup
- sugar - 2 T
- butter - 2 T
- salt - 1/8 tsp
- cream cheese, softened - 8 ounces
- creamy peanut butter - 1/4 cup
- sugar - 1/2 cup
- egg - 1
- whipping cream, divided - 5 T
- salt - 1/8 tsp
- Butterfinger candy bars, crushed - 6 fun size
- semi sweet chocolate chips - 1 cup
Instructions:
In a bowl, mix together wafer crumbs, 2 T sugar, 2 T butter and 1/8 tsp salt. Spoon mixture into mini cupcake pan and press. Bake in a preheated 350 degree oven for 10 minutes; remove from oven. Reduce oven to 300 degrees.
In a bowl, beat cream cheese and peanut butter until smooth. Add 1/2 cup sugar, egg, 4 T cream and 1/8 tsp salt until well combined. Slowly stir in crushed Butterfingers. Pour batter over baked crust. Bake at 300 degrees for 20 - 22 minutes or until set. Cool for 2 hours, remove from pan.
Melt chocolate chips stir in 1 T cream until smooth and glossy. Spoon over the cheesecake tops, sprinkle with crushed Butterfingers.
