Caramel Cake Flan
Ingredients:
- butter - 1/4 c
- sugar - 3/4 c
- egg - 1
- flour - 3/4 c
- baking powder - 1/2 t
- baking soda - 1/2 t
- salt - pinch
- buttermilk - 3/4 c
- vanilla - 1 t
- evaporated milk - 12 ounce can
- sweetened condensed milk - 14 ounce can
- eggs - 4
- vanilla - 1 t
- dulce de leche - 1 c
Instructions:
Butter bottom and sides of 8 - 2 inch deep x 4 inch diameter molds. Evenly divide the dulce de leche between the molds.
In a bowl, beat butter and sugar until fluffy, add vanilla; beat in egg.
In a another bowl, mix flour, baking powder, baking soda and salt. With mixer on medium speed, beat in half the flour mixture and half the buttermilk into the butter mixture. Add remaining flour and buttermilk mixtures; mix for an additional 2 - 3 minutes.
Prepare flan - beat eggs, vanilla, evaporated milk and sweetened condensed milk until smooth.
Pour cake batter evenly into each mould, pour flan mixture over top. Place moulds in a deep large pan. Pour hot water into the baking pan to halfway the height of the moulds. Cover pan with foil and seal and bake in a preheated 350 degree oven for 50 - 55 minutes (check with a toothpick that the cake is done). Remove from the water bath; cool.
Place in refrigerator for 2 hours, place serving plate on top of mould and turn upside down; serve.
