8 ounces cream cheese, softened
4 T powdered sugar
1 t vanilla
1/2 t cinnamon if desired (goes well with the apple topping)
4 flour tortillas (soft taco size, 6 or 8″)
1 pint strawberries, sliced
1/4 c sugar
2 to 4 c canola oil, for frying
Mix together 1/4 c sugar and 2 t cinnamon
In a small bowl mix sliced strawberries and 1/4 c sugar and set aside. In bowl mix together cream cheese, powdered sugar, and vanilla till creamy. Stir in 1 t cinnamon.
Warm tortillas in the microwave, just to make them softer. Spoon 1/4 c of cheesecake mix in the middle of the tortilla. Fold to form a burrito. Secure with toothpicks along the seam.
Heat oil over medium heat. Place burritos (one at a time) into the oil, and lightly fry. Remove from oil and let cool on paper towel. Remove toothpicks, lightly sprinkle with cinnamon and sugar mixture, top with strawberries and a dollop of whipped cream. Other toppings can also be used (fruit, chocolate, etc)
