Cheesecake Cups
Ingredients:
- cream cheese, softened - 16 ounces
- sugar - 3/4 cup
- eggs - 2
- vanilla extract or flavor of chioice - 1 tsp
- refrigerated sugar cookie dough - 1 log
- pie filling of choice raspberry, cherry, lemon, blueberry, etc - 1 can
Instructions:
Preheat oven per sugar cookie dough package directions. Place cupcake liners in a regular cupcake pan.
In a bowl, mix together cream cheese, sugar, eggs and vanilla; set aside. Slice cookie dough into 1/4 - 1/2 inch slices. Place dough into bottom of each liner. Bake crusts for roughly 10 minutes. IMMEDIATELY add 2 T cheesecake mixture in the middle of each crust, return to the oven bake for 20 minutes. Cool and top with pie filling of choice. Yields 24.
