4 ounces cream cheese, soft
1 t lemon rind
3 T sugar
1/2 t lemon juice
1 can blueberry or cherry pie filling or desired flavor
8 egg roll wrappers
oil for frying
In a bowl, combine and mix cream cheese, lemon rind, sugar and lemon juice. Spoon into a Ziploc bag. Cut off the corner of the bag.
Pipe a line of cheese mixture across each wrapper. Place 8-10 cherries on top of the cheese mixture.
Wet the edges of the wrapper with water and roll up tightly ensuring the edges are sealed well. Let the rolls sit for 3-4 minutes to allow the water to dry.
Heat oil to 350 degrees and fry egg rolls until brown and crispy.
Serve warm.
