Cheesecake Filled Sugar Cookie Cups
Ingredients:
- butter - 3/4 cup
- sugar - 1 cup
- egg - 1
- vanilla - 2 t
- flour - 2 cups
- baking soda - 1 t
- cornstarch - 2 t
- cream cheese, room temperature - 12 ounces
- powdered sugar - 1 3/4 cup
- vanilla - 1 1/2 t
- fresh fruit of choice -
Instructions:
In a bowl, cream together butter and sugar, beat in egg and vanilla. In a second bowl, stir together flour, baking soda and cornstarch. Slowly add to butter mixture. (Dough will be thick). Take 2 T of cookie dough, roll into balls. Grease muffin tin cups, press dough into the pan to form cups. Bake in a preheated 350 degree oven for about 10 minutes.
Prepare cheesecake -- Combine cream cheese, powdered sugar and vanilla, mix well. Spoon filling into the cookie cups. Top with fresh fruit of choice. (Dice or slice larger pieces of fruit). Place in refrigerator until cheesecake filling has set; serve.
