Cheesecake Stuffed Apples
Ingredients:
- baking apples - 6
- cream cheese, softened - 8 ounces
- sugar - 1/4 cup
- vanilla - 1 t
- egg - 1
- cinnamon - 1 t
- caramel sauce, pecans - garnish
Instructions:
Slice off the tops of the apples, scoop out the insides; discard core and seeds. In a bowl, combine cream cheese and sugar until smooth. Add vanilla, egg and cinnamon mix until smooth. Fill each apple 2/3 full with the cheesecake mixture. Place apples on a baking sheet (make sure they aren't touching), bake in preheated 350 degree oven for 20 - 25 minutes until cheesecake filling is set. Place apples on serving plate, place in refrigerator until completely cooled. Before serving garnish top with caramel sauce and pecans. Serve cold or at room temperature.
