Cookie Dough Ice Cream Sandwiches
Ingredients:
- butter - 1/2 cup
- brown sugar, packed - 1/2 cup
- sugar - 1/4 cup
- milk - 3 T
- vanilla extract - 2 tsp
- salt - 1/tsp
- flour - 1 1/2 cups
- mini chocolalte chips - 1 cup
- ice cream, softened - 2 cups
Instructions:
Line 2 - 8 x 8 inch pans with parchment paper, have ends of paper extend over the sides of the pans; set aside.
Melt together, butter, brown sugar and sugar, stir until mixture is melted and smooth. Stir in milk, vanilla and salt. Add flour; stir until well blended. Stir in chocolate chips. Place in refrigerator for 15 minutes.
Press 1/2 of the dough into each pan until smooth and even. Place in the freezer for 30 - 60 minutes.
Remove from freezer. Gently spread ice cream over dough in one pan. Peel parchment paper from the second layer of cookie dough place smooth side up on top of ice cream. Cover, place in the freezer until firm.
Cut into 16 bars. Wrap each bar in plastic wrap. Store in freezer. If desired dip one end of bar in hard shell chocolate coating.
