Crepes
Ingredients:
- eggs - 2
- milk - 1 c
- water - 1/3 c
- flour - 1 c
- sugar - 2 T
- vanilla extract - 1 t
- rum (optional) - 1 T
- butter, melted - 2 T
- butter for coating pan - 2 -3 t
Instructions:
In a bowl combine eggs, milk, water and butter. Add flour and salt; whisk until smooth. Cover, place in refrigerator for 1 hour. Lightly coat a crepe pan with butter, heat over medium heat. Place 3 tablespoons or so of batter in the pan and tilt the pan to make a 6 - 7 inch crepe. Cook 1 minute, until almost dry on top and edges lightly browned. With a spatula flip the crepe over, cook the other side for 15 seconds until lightly browned. Place crepes on a plate to cool. Wipe crepe pan with butter as needed.
Fill with your favorite dessert filling. Yields 16 - 18 crepes
