Crock Pot Bread Pudding
Ingredients:
- eggs - 3
- light brown sugar, packed - 1/2 cup
- ground nutmeg - 1 t
- heavy cream - 1 cup
- milk - 1 cup
- vanilla - 1 1/4 t
- butter, melted - 1/4 cup
- raisins - 1/2 cup
- butterscotch chips - 1/2 cup
- pecans - 1/2 cup
- cinnamon - 2 T
- wheat bread, cut into 1 inch cubes - 20 slices, stale
- heavy cream - 1/3 cup
- powdered sugar - 1 cup
- butter - 1/2 cup
- rum OR your favorite liquor - 1 1/2 T
Instructions:
Coat the inside of a 4 quart crock pot with cooking spray. In a bowl whisk together eggs, brown sugar, cinnamon and nutmeg. Stir in milk, cream, vanilla and butter, add bread cubes stir until moistened. Fold in butterscotch chips, raisins and pecans, place in crock pot. Cover, cook on low for 2 hours or until center is firm. Let stand for 30 minutes. Serve warm with glaze or whipping cream.
Prepare glaze -- In a saucepan melt together 1/3 cup cream, 1 cup powdered sugar and 1/2 cup butter, DO NOT boil. Stir in rum, pour over bread pudding.
