Dark Chocolate Raspberry Pie Bars
Ingredients:
- butter, soft - 1 cup
- flour - 2 cups
- packed light brown sugar - 1/2 cup
- salt - 1/4 t
- dark chocolate chips - 1 cup
- mini semi sweet chocolate chips - 1 cup
- sweetened condensed milk - 14 ounce can
- fresh raspberries, semi crushed, sweetened with a little sugar - 3/4 cup
Instructions:
In a bowl, cream butter, mix in brown sugar, flour and salt, mix until crumbly. Press 1 ¾ c crumb mixture into greased 13 x 9 inch baking pan. Set remaining crumbs aside.
Bake in preheated 350 degree oven for 10 - 12 minutes, until lightly golden. Remove from oven.
While crust is baking, place sweetened condensed milk and 1 c dark chocolate chips in a sauce pan over low heat, stir until melted and smooth. Spread over warm crust.
Sprinkle remaining crumbs over chocolate layer. Sprinkle raspberries over crumb mixture and top with mini chocolate chips.
Bake for 20 - 30 minutes. Completely cool, before cutting into bars. If desired serve warm with a scoop of ice cream.
