1 c whipping cream
1 c Mascarpone cheese
2-3 T sugar to desired taste
1 t vanilla extract
1 T amaretto or rum
1 c strong cold coffee
7 oz. ladyfingers
cocoa, for dusting
In a bowl whip, cream, sugar and vanilla. Add cheese and amaretto or rum.
Pour coffee into a shallow dish. Dip enough ladyfingers in coffee to cover the base of a 6×9 inch square dish. Spread 1/2 of cream mixture over ladyfingers. Repeat with another layer of ladyfingers dipped in coffee and spread rest of cream mixture over ladyfingers. Cover and place in refrigerator for at least 2 hours. Before serving dust with cocoa.
